Learn about shiitake mushrooms (biology, history, culinary use, nutritional aspects, medicinal aspects) and how to cultivate them on logs from tree selection through postharvest handling and storage. Participants will inoculate a log and will leave the session knowing how to cultivate shiitake mushrooms on their own.
